Grape Tomato and Minced Garlic Muffin



Follow recipe for Hodgson Mill Insta-Bake Biscuits (I use Almond Milk)
-Mix in a few dashes of the following...Thyme, Oregano, Basil
-Cut up as many Grape tomatoes as you wish. I think I did about 10
-Mince with hand grater 2 cloves of garlic and mix into mixture.
-Spray a 12 cup cupcake pan with cooking spray and fill each cup with 1T (over flowing size, don't be shy) of the mixture. You'll have some left, so add where it may need.
-With finger or bottom of T-spoon, make sure mixture is even throughout the muffin area.
-I then cut up more Grape Tomatoes and place one in the center.

**Today, I made these yummy muffins again and added avacado in it! Yummy!!**

Crock pot Turkey and Veggie Spaghetti with grape tomato and minced garlic muffin



I was really in the mood for Spaghetti. I usually make mine from scratch but I used what I had and it turned out yummy!
1 package of 93/7 Ground Turkey. I believe it was the 1#.
1/4 White or yellow onion chopped
2 cloves of garlic chopped or minced
Few dashes of garlic pepper
2 handfuls of spinach
1 yellow squash
3-5 handfuls of broccoli slaw ( I have a big bag and needed to get rid of it, but I really liked it).
**Use whatever veggies you have or like, don't be afraid to try something!
1/4 C Diced Italian tomatoes (All I had. I just had a little left from night before. You can use a whole can).
1 Jar Classico Mushroom and Ripe Olive ( I always like to keep on hand a jar of sauce. I use Fooducate App and Classico is graded good but there are better ones).

Brown up the turkey, onion and garlic is a pan. Stir and break it up occasionally.
While that is browning, spray your crock pot with cooking spray. Cut yellow squash and place those and the tomatoes and sauce in crock pot, give it a stir.
Once turkey is mostly cooked, add to crock pot. I know mine didn't have much oil, so I just poured it into crock pot. If your meat has lot's of oil, then drain. Give it all a stir, put on low for 3 hours and it will be nom nom good!

Chicken, Lentil and Veggie Crock pot soup



Chicken, lentil, veggie soup
1 can healthy choice tomato soup (I had it and wanted to get rid of it. It has HFCS, so I will not buy it again).
2 cans diced tomatoes with Italian seasoning
2 cans low sodium chicken broth
5 stalks of celery cut
I used like 3 baby carrots, thats all I had.
1/4 of yellow onion, cut
About a cup of Lentils, I just grabbed with hand!
3 boneless/skinless chicken breast chopped into pieces.
1 bag frozen green beans.
 Put all in crockpot and cook on low for 7-8 hours
Makes a whole regular size crockpot full!
I ate it just how it was with avocado and some brown rice crackers- I have to have crunch! You could add pepper to taste.

Pulled Pork/Veggie Egg Rolls

1 Pork Roast, cooked in crock pot with dried onion, water and a beef cube
Once pork is cooked, shred and place it in a bowl.
1 shredded zucchini
1 shredded yellow squash
1/4C chopped red onion
Handful of chopped spinach
Handful of chopped cilantro
3-4T of BBQ sauce, depends on how moist you want mixture.
3-4T of Paul Newman lowfat Sesame Ginger, depends on how moist you want mixture.
Mix all with pork.
Fill eggroll papers. Follow directions on package for folding. I actually like them when double wrapped.
Place on a cooling rack that is on a cookie sheet. Spray with pam spray and cook @375 for about 30 minutes. I would of actually cooked them a little longer than I did tonight.
Serve with sweet and sour sauce and edaname

Baked Burrito

1 10oz can chicken, drained
1 can minced olives
1 shredded zucchini
1-2 can tomato w/green chilies (I can't remember but start with one. Just want mixture moist)
I had 12 frozen turkey meatballs that were already defrosted and needed to be used. So I crushed them up and added them to mixture.
Mix all together in a bowl
I used a whole wheat wrap because they are the only ones big enough and are truly 1000% whole wheat.
***First ingredient should be whole wheat if looking for 100% whole wheat. If its not, it had white flour***
Roll mixture up in tortilla
Bake @350 for 25 minutes
I added some salsa on top!

Almond Butter/Devil's Food Cake

1 box Extra Moist Devils Food Cake, or any kind of cake you wish
1 C No sugar added applesauce
1 C water
Handful of Dark chocolate pieces
2-4T of Almond Butter for the lines (optional)

Mix cake mix, applesauce and water together. Place in a sprayed baking dish. Sprinkle with dark chocolate pieces and line with almond butter.
Bake as directed on box.
**if making cupcakes just drop a small amount of almond butter in middle!

Lemon Lover!

I love lemon! I wanted to make something lemon but different. I found this website for a diary free lemon filling...
I used Egg whites and Truvia Sweetener
Something went wrong and it never got thick like the recipe said it would.

I already created a fun little crust. I smashed 1 whole honey graham cracker and placed it in bottom of a pie dish. I then broke up 1.5 (if that, my daughter was eating most of it) frozen Triple Chocolate VitaTop. Mix the graham cracker and VitaTops, pressed them down a bit and just left it.

I decided that I would just experiment with the filling. I poured it over the crust and naturally the crust lifted into the filling since it wasn't thick. I then figured I would place it in fridge for a few hours. I noticed it still wasn't setting so I placed it in freezer. 4 hours later I looked and it was starting to set but it was also turning white. I then had to sample it. I loved it! Tons of lemon flavor, with just enough chocolate. I placed foil over the top and returned it to the freezer. It seems to melt fast, so don't leave it out long.

I will be trying the recipe again, with real sugar and see if that is what happened. But, I must say, I do like what I created on accident as well!

10 Dark Chocolate pieces (mix half in mixture, and sprinkle the other on top)

Shrimp Jambalaya

Here is what I changed and added...
1/2 Cup of White Wine
Pinch of Saffron
Pinch of Red Pepper Flakes
1 Turkey Kielbasa, cut into small pieces
Red pepper instead of green
Asparagus
2 cups of Couscous- at the end before adding the shrimp

**I changed the recipe today again, 3/22/11**

1 chicken breast, cut and slightly browned in a pan before putting it in crock pot
2 sprigs of Kale added when Shrimp is added
Did not have celery, used carrots. Did not have any Asparagus so I put in a can of drained green beans.

Blackberry Cobbler

Here is what I changed...
1C Splenda
1/2C Organic Pure Cane Sugar (I was just experimenting. I could have used all splenda to make SF).
2T Butter
1-Individual Unsweetened Apple Sauce (the kind you would put your kids lunches)
I used a slotted spatula to scoop out Blackberries. I poured a little of the juice on as well, just not much. I saved some juice in a container for another creation!

Pie dough...
I followed Hodgson Mill Insta-Bake for pie. I had leftover pieces so I just baked it up in another dish and will use it for something else. I didn't want to add too many calories to this Cobbler!

Indoor grilled Spicy Chicken Sausage and Veggies

Super Easy!

Cut up some veggies- your choice. I used broccoli, Red pepper, radish and onion
Place on a indoor grill pan Add a little S&P and let cook.

Place Chicken Sausage links (I believe mine were Johnsonville or Foster Farms) on grill pan as well.
Let cook, make sure you can pull link away without it breaking. If so, then its ready to be turned, if there is a tug, then it still needs to cook on that side. Keep turning until all sides have been cooked and link is fully cooked. Doesn't take long.

I warmed up about 1/4 cup of my Collard Green pesto and mix it into the veggies.
I served mine with my leftover Butternut Squash Risotto.

Herb Crusted Pork Loin with Butternut Squash Risotto


Roasted Veggies...
Asparagus, Carrots, Beets and Red Onion
Drizzle a little EVOO on them and a pinch of S&P
Bake @375 for 20 minutes, flip beets over and turn carrots and asparagus, bake another 20 minutes.

Herb Crusted Pork Loin...
I followed this recipe from Curtis Stone.

I did not follow to a tee. I forgot to go pick some fresh Rosemary from my parents and I did not have any fresh Thyme. So I mixed my dry Rosemary and Thyme and sprinkled on after I pan seared the loin.
*Hint, rub dried spices in hand before placing on food, brings them back to life!*
**I topped my pork with some of my homemade Pesto. I had some in the freezer, I believe its my collard green pesto**

Butternut Squash Risotto...
I followed this recipe from Allrecipes

I used a whole Butternut Squash
I also only had about 4 cups of chicken stock so I just added more white wine to the chicken stock.

Mini Shrimp/Tilapia Tostadas


Green/Yellow chili pepper salsa...
2 yellow chili peppers, seeds and ribs removed (optional, removing them, lowers heat level)
1 Green chili pepper, seeds and ribs removed (optional, removing them, lowers heat level)
1/4 White onion, chopped well
2 cloves garlic, minced
2 Pinches of S&P
1t EVOO
1T Seasoned Rice Vinegar
1 small jar minced black olives
1 Lime juice
1 Lemon wedge juice
Mix all together in a bowl, taste to make sure taste okay, if so, cover and place in fridge to marinate. If not, add more of whatever ingredient you may want.

Fish...
1-1.5# shrimp (I used little ones) detailed and cleaned
2 Tilapia fillets, cut into pieces
1 Lemon juice
1 Lime juice
2 Pinches of S&P

In a bowl mix the everything together. Place fish on a sprayed cookie cooling rack that is on a cookie sheet.
Bake @400 until fish is cooked, approximately 20-25 minutes.
Take out and just let cool.

Tostada's...
6 yellow corn tortillas
Pam Spray
2 Cupcake pans

Warm the tortillas in microwave for about 30-40 seconds until soft.
Cut them about 1/2 inch thick strips
Press 4 strips into each cupcake tin. Crisscross and etc.
Spray a little spray over them and then back @400 for 10-15. Just want them golden brown.

Fill the mini tostada's with the baked fish mixture.
Top with some Green/Yellow chili pepper salsa.

Lime/Cilantro Brown Rice...
1 cup brown rice
2 cups water, plus some extra to keep rice moist
1 Lime juice
1 Handful cilantro
*optional, instead of water, cook rice in Chicken broth or stock. Or do a half/half. Gives more taste*
Cook Rice, add lime juice.
I just put a lid on and let cook. Check occasionally, stirring and maybe adding more water or broth.
Once rice is cooked, add cilantro, mix and serve.
Takes about 45 minutes on med heat to cook, just test the rice!

Veggie loaded Asian Turkeyballs


In a bowl combine the following...
2 Slices Red Onion, diced
1 Garlic clove, minced
1 Sprig of Kale, chopped
1 Handful of Spinach, chopped
1 Handful of Cilantro, chopped
1/2 Grated Zucchini
1 Zest and juice of a Tangelo
1t Minced Ginger
1/2t Chili Sauce
1t Sweet Chili Sauce
1T Organic Soy Ginger Sauce (you'll need a little more for brushing on meatballs once rolled)
1/4C Egg Whites
1T Rice bread crumbs
1t Flaxseed Meal
1t Wheat Germ
1t Wheat Bran
1.5# Turkey, 93/7
Mix all with hand and form into Turkeyballs. Place on a sprayed cooling cookie rack that is on top of a cookie sheet. Brush on a little Soy Ginger Sauce on top of each Turkeyball.
Bake @400 for 40 minutes
Enjoy!

**I served mine over roasted veggies and a mixture of Whole Grain Udon Noodles and Saifun Noodles. We also added a little squeeze of Chili Sauce, we like the heat!**

Coconut Thai Red Curry Tilapia


4 Tilapia Fillets (I marinated mine in Amino Acids for a couple of hours)
2 Parsnips, pill and cut in thin circles/rings
3 Handfuls of Brussels Sprouts, cleaned, stem cut off and then cut in half
1 Sweet Red Pepper, cut into long strips
Pam Butter Spray
Cilantro (just for a topper, don't really need)
Pepper
Garlic Salt
Trader Joe's Thai Red Curry Sauce (I just used the sauce I had left. I did not measure but I would say not more than 1/2 cup).
1/4C of Coconut

Parsnips and Brussels Sprouts...
Place the cut up Parsnips and Brussels Sprouts in a sprayed baking dish. Spray with Pam Butter Spray, sprinkle with pepper and garlic salt. Mix together, easiest way is with hand.
Bake @400 for 1hr, stirring once. I like crispy, so you may want less.

Tilapia...
I used my Pampered Chef baking dish
Spread a little sauce on bottom of pan
Add fillets to pan
Sprinkle coconut on top of fish
Add more sauce, just need enough to cover the fish-not a thick layer. Spread with a a spatula-softly.
Add the red pepper on top and your done!
Bake @400 for 30-40 minutes, just test a piece to make sure its done, should easily come apart if put a fork in it.
Once I platted the fish, I spooned on some of the juice that was in the pan.

Veggie Packed Open Faced Turkey Burger


In a bowl combine the following...
1.5# of Turkey Meat 93/7
1/2 Grated Zucchini
1/4 Grated Yam
1/4 Red onion, grated and a few chopped pieces
Handful of Cilantro-cleaned and chopped
3 Sprigs of Kale-cleaned and chopped
1T Flaxseed Meal
S&P just a couple of pinches
1/2t Cumin
1/2t Chili Con Limon seasoning
10 dashes of Frank's Red Hot Sauce
10 dashes of Worcestershire Sauce
1/2t of Lemon Pepper
**I did not measure my spices so I am guessing this is how much I used of each**
Mix with hands-not too much. Make into patties.
Place on a sprayed Cookie cooling rack, that is on top of a cookie sheet. Bake @400 for 40 minutes. Turn over once at 20 minutes

Baked Yams...
Cut the remaining Yam from what was not used in meat mixture. Cut into circle/rings. Place in a baking dish and spray with Pam Butter Spray and S&P. Mix and bake @400 until your desired crispness.

Mango/Pear Endive Salad
1/2Mango, chopped
1/2 Pear, chopped
1/2 Tomato, chopped
Very little Red Onion, chopped
Handful of Mix Endive
Handful of Mix Spinach
1T Paul Newman's Lowfat Sesame Ginger Dressing
Mix and serve with Burger

Building your burger...
I used 1/2 of a Sandwich Thin- toasted
Mix a little Mustard and Ketchup on the bread together
Placed the baked Yams over the mustard/ketchup
Place 2 sandwich pickles and about 5 pepperonis
Placed the Turkey Pattie on top
This was DELISH! It did have a little heat to it with the pepperoncinis- you can build your own way. I made my hubby's with the whole sandwich thin.

Baked Artichoke and Shrimp


Artichoke..
Whole cleaned and cut Artichokes (baked 3)
3 Garlic cloves, cut into little pieces
1/2 lemon
Foil- 2 pieces each artichoke
EVOO
S&P

Cut stem off Artichoke and place on the 2 sheets of foil
Start stuffing garlic into artichoke, as much as you want
Stuff a little lemon and then squeeze the lemon juice all over.
Sprinkle with a little EVOO and little S&P
Wrap the foil so it all bunches at the top
Bake @425 for about 1hr 15mins

Couscous...
1 box Toasted Pine Nut Couscous
Follow directions
Add juice of 1/2 of a lime
When ready to remove from heat, add 2 sprigs of Kale (cleaned and chopped) and a handful of chopped cilantro

Dry Rub Shrimp...
I had little shrimp so that is what I used. I believe I had about 70
In a bowl mix the following for the dry rub (this rub would also be good on chicken, steak you name it)

2T Wheat germ
1T Flaxseed Meal
1T Wheat Bran
1/2t Chili con Limon spice
1/2t Paprika
1/2t Cayenne pepper
1/2t Garlic Salt
1/2t Garlic Pepper
Pinch of Red Pepper Flakes
1/2t Old Bay
1/2t Lemon Pepper
1/4 of a piece of unsweetened Dark Chocolate-grated
Mix well.

Make sure shrimp is clean, detailed and patted dry.
Place shrimp in rub mixture and coat well. Place shrimp on a sprayed cookie cooling rack that is on top of a cookie sheet.

I believe I baked @400 for 10-15 minutes...I really don't remember, but you just really want the rub to bake into fish!

Cabbage wrapped Tilapia Tacos


4 fillets of Tilapia or any fish.
I drizzled some Amino Acids on mine to marinate for a day
Old bay seasoning
Dried onion
S&P
Mango, chopped
Avocado, chopped
Cabbage, about 1/4 cup chopped and the rest leave big
1/2 Zucchini, grated
Fresh cilantro
1 Lemon
1 Lime
2T Seasoned Rice Vinegar
1/4 of Red onion, chopped
Cooking spray

I Baked my fish. I patted it dry, sprayed a cookie cooling rack that was placed on a cookie sheet. Then sprinkled each fillet with Old Bay, dried onion, and a little S&P. Flipped the fillets and sprinkled the other side.
Baked @ 400 until fish was cooked. Take out and let cool, then cut into pieces

Mango Salsa...
In a bowl, combine the mango. avocado, red onion, 1/4 cup chopped cabbage, shredded zucchini, Rice Vinegar, lime, lemon, and a handful of fresh cilantro. A pinch or S&P and mix together.

Building tacos...
Take a big Cabbage leaf, add some fish, and a spoonful or two of mango salsa. Add a little more cilantro and yummy!

Fried Rice made from Leftovers


I didn't write my recipe down, so going by memory! I know I wanted to use up some leftovers--sweet potato, Sweet Italian Turkey Sausage, broccoli and Kale. I know this made enough for dinner and lunch for 3 days!

1 cooked sweet potato
2 Sweet Italian Turkey Sausage, casings removed
2 heads of broccoli already cooked
2 sprigs of Kale
1/4 onion
1T EVOO
6 chopped up sundried tomatoes
2 Cups Brown Rice
1/2 Cup Whole Grain Quinoa
S&P, just a couple of pinches
1t garlic powder
2T Light Soy Sauce (may need more)
1/4 cup egg whites
I believe I added 1 whole lemon juice, and various seasonings--I just can't remember. I just start grabbing and creating!
I know at the table we added a little hot chili sauce and a little sweet chili sauce

Start the rice about an hour earlier than the rest. 2 cups of Rice, 3 cups of water. Cook with lid over. Keep checking, may have to add more water. Once rice is a little soft, add the Quinoa mix in and continue to cook. I added some dried onion and basil to my water.

In skillet, saute onion in EVOO and sausage until cooked. Once cooked, add kale broccoli, S&P, garlic powder, sundried tomatoes. Cook until warm. Then add the egg and mix all together. Add the rice to mixture, soy sauce and lemon.  Cook for a minute or two.

Almond-crusted Chicken Tenders


I didn't write down the recipe, so I believe I actually followed this recipe!

I know I didn't use Canola oil. I used EVOO. Also, I think I added whole wheat bran, to the dry mixture.

I created a couple of sauces to go along with the tenders. One was a spicy ketchup and the other was a BBQ sauce. We liked the BBQ the best. Again, I didn't write anything down! I just start grabbing and creating some days!

Baked Brussels Sprouts.
Wash and cut, drizzle with EVOO, S&P and bake at 400 until your desire! Same for the butternut squash.

Baked Tri-color Gnocchi


I didn't write down my recipe, so I believe this is what I did! Teach me not to write it down!

1 package, Tri-color Gnocchi, cook as directed
3 Sweet Turkey Italian Sausage links, remove casings
1/2 white onion
1 minced garlic clove
1 oz Goat Cheese
1 package frozen spinach, defrosted/rinsed/drained
4 sprigs of Kale
1T EVOO
1-28oz Italian style tomatoes, diced, don't drain.
S&P, just a few pinches of each
I can't remember, but I think I added some dry basil and oregano.

Heat EVOO in skillet over medium heat. Add onion and garlic. Saute for about 5 minutes. Add Sausage, breaking it into pieces and cook until no pink. Add the spinach, Kale, S&P.

Drain Gnocchi, do not rinse. Add Gnocchi to the sausage mixture.

Spread 1/2 the can of tomatoes on bottom of a baking dish. Spread the sausage mixture into the baking dish. Spread the other 1/2 of tomatoes on top. Sprinkle the goat cheese on top.

Bake @ 350 for 20 minutes. Just so the cheese melts.

Spice Apple Bran Muffin w/Strawberry-Blackberry sauce

3/4C water
1/2C Aguva
3T egg whites
2C Spice Apple Bean Muffin Mix
1/2C No sugar added Applesauce
Mix all ingredients together scoop out with ice cream scooped into 12 greased or lined muffin tins.
Bake @400 for 15-16 minutes.
Take out and let cool, then place a hole in tip and pour some of my Strawberry/Blackberry sauce in hole and on top.

Toasted Almond/Mustard Red Snapper (or any fish)


4 fillets of Red Snapper
Amino Acid (optional, I poured a little on Red Snapper the day before in a bag to marinate)
2 handfuls of plain Almonds
1T EVOO
S&P just a little to give Almonds taste when toasting
Brown Rice Bread Crumbs (or any that you like)
1/2C Dijon Mustard and Honey Mustard (I ran low on Dijon so I mixed the two. You don't have to though)
Place mustard mixture in a bowl and bread crumbs/almonds-once toasted and smashed in another bowl.
Cookie sheet and baking rack-place on top of cookie sheet.
Spray the cookie sheet and rack with non stick spray.

Mix almonds, EVOO and S&P and arrange them on a baking sheet. Toast @375 for about 20-25 minutes. Just keep an eye on them.
Once almonds are done, either put in food processor or put in plastic ziplock bag and smash. Once they are crumbs, may have a few chunks, mix with bread crumbs.
Make sure Red Snapper is dried, and then place in mustard mixture and coat well. Next, place in bread crumb/almond mixture. Once coated, lift and let any fall off. Place on cookie rack that should be on cookie sheet.
Repeat until all fillets are done.
Bake @400 for 30 minutes.
**I used some of the leftover bread crumbs/almond mixture with some roasted veggies- green beans and carrots!
***In the picture, you see the green beans and carrots I roasted with Spray Butter, garlic salt and pepper. I also sauteed up some spinach. 1/2T of EVOO, 1 garlic, smashed, 1/4C of onion, 1 lemon wedge-juice. Saute the  garlic and onion in the EVOO. Add spinach a splash of water and lemon. Let cook down. I also made Butternut Squash fries. Just follow my recipe for my Baked Butternut Squash. I actually like the little cubes of Butternut Squash better than the fries. I like when they get real crispy! See my Strawberry-Blackberry Sauce for the sauce on top of the Red Snapper.

Strawberry-Blackberry Sauce



Little less than 1/2C of Orangic Pure Sugar Cane
About 2 Handfuls of frozen strawberries and blackberries
10 squirts of lemon juice
Boil in sauce pan and smash. I just cooked on low for awhile (about 30 minutes, I think). I didn't mind that it was a little chunky, if you don't like blend it in blender or food processor.
**I used this on my toasted almond/mustard crusted red snapper. Will also be great on toast or a dessert topping!

Baked Fish Sticks, Parsnip Fries and Asparagus

For the Fish Sticks, I followed the following recipe,from EatingWell.com and made a few changes

  • Canola oil cooking spray
  • 1 cup whole-wheat dry breadcrumbs, (see Shopping Tip) or 1/2 cup plain dry breadcrumbs
  • 1 cup whole-grain cereal flakes
  • 1 teaspoon lemon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 large egg whites, beaten
  • 1 pound Tilapia fillets, cut into 1/2-by-3-inch strips
  1. Preheat oven to 450°F. Set a wire rack on a baking sheet; coat with cooking spray.
  2. Place breadcrumbs, cereal flakes, lemon pepper, garlic powder, paprika and salt in a food processor or blender and process until finely ground. Transfer to a shallow dish.
  3. Place flour in a second shallow dish and egg whites in a third shallow dish. Dredge each strip of fish in the flour, dip it in the egg and then coat all sides with the breadcrumb mixture. Place on the prepared rack. Coat both sides of the breaded fish with cooking spray.
  4. Bake until the fish is cooked through and the breading is golden brown and crisp, about 10 minutes.
How I created mine...
Followed all ingredients except for whole-grain cereal. All the cereal I looked at had high fructose corn syrup in them. Instead I did the following...
1C Brown Rice Bread Crumbs
1/2 C Wheat germ
1/2 C Wheat flakes
and I threw in some whole wheat panko bread crumbs I had left, really was only about 2T
I actually had lots leftover, next time I will reduce.
I baked mine @400 for 40 minutes and then @450 for 15 minutes. We really liked how they came out.

Served with my homemade tarter sauce, see sauces.

Parsnip Fries
I followed this recipe from doitdelicious.com. Except, for the ginger ketchup, I added a few splashes of Frank's Red Hot Sauce. I did not add as much pepper to the Parsnips. I actually cooked the Parsnips @400 for 30 minutes and then @450 for 15 minutes. I think they turned out awesome! 

Parsnip Fries with Ginger Ketchup
Prep time: 10 minutes
Total time: 35 minutes
Yield: serves 4
Ingredients
1 1/2 pounds parsnips, peeled and cut into sticks
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1/4 cup ketchup
1 teaspoon grated fresh ginger
Directions
Heat oven (with oven rack in middle) to 400°F. On a rimmed sheet pan, toss together the parsnips, oil, 1/2 teaspoon salt and 1/8 teaspoon pepper (6 turns on pepper mill). Roast, stirring half way through, until the parsnips are golden brown and tender, about 25 minutes. Meanwhile, combine the ketchup and ginger. Serve with the warm fries.

For the Asparagus, I just cleaned, cut and added them to the pan with Parsnips. I just spray buttered these and sprinkled garlic salt and pepper on them.

Exploding Salsa Pork Taquitos

Took idea from Hungry Girl's Exploding Chicken Taquitos, here is her recipe...

8 corn tortilla, warm in microwave until soft
1-10oz can chicken, drained
1/2 cup salsa
1/2 cup FF cheddar cheese
1/4t Taco seasoning
Mix all together
Place 2T of mixture into each corn tortilla, place on baking sheet and bake @375 for 15 minutes
Serve with Sour cream and salsa.

My version...
I used pork today but can be done with chicken or even fish...
Crock pot
Butter Spray
1 orange pepper, cleaned and cut, spray with a little butter spray
1 yellow pepper, cleaned and cut, spray with a little butter spray
8 Tortillas, corn warm in microwave until soft
4 Boneless pork fillets or more
1 jar of salsa
1/4t taco seasoning
Place pork, salsa and taco seasoning in crock pot. Cook on low for 6 hours
20 minutes before ready to assemble taquitos, place 1/2 cup FF cheddar cheese (I used my veggie cheese). With 5 minutes left, turn off crock pot.
Mix ingredients and scoop 2T into each corn tortilla. Fold and don't worry if they break. Place on baking sheet.
Place buttered sprayed yellow and orange peppers on top of taquitos
Pour any remaining salsa from crock pot over all.
Bake @375 for 15 minutes
Enjoy!

Whole Grain Udon Noodles with Peanut Sauce

1/2 package of Whole Grain Udon Noodles, cook according to package.
Handful of snap peas, washed and cut
Handful of spinach
1 jar pimientos, not drained
My peanut sauce, located under sauces
Warm up snap peas, spinach and jar of pimientos in a sauce pan. Once warmed add peanut sauce to top.
Once noodles are cooked, drain and then add them to pan with veggies. Mix together.

HG Sweet-hot Steak Bites

This is a Hungry Girl recipe
1# cut up Fillet Mignon, seasoned with s&p
8oz pineapple crushed, lightly drained
1/2t light soy sauce
1/3 cup Asian Sweet Chili sauce
1/4t red pepper flakes
1 chopped onion
Place all in crock pot, mix together and cook on high for 4 hours
**7 pieces of meat= 200 calories

My version..
I had stew meat in freezer, so I just used that
followed the recipe except I only had pineapple chunks
1 zucchini chopped
1/2 white onion
I caramelized a whole head of cauliflower in a little EVOO on the stove top
I served the steak bites over the cauliflower and then sprinkled a few crispy dried Chinese noodles on top.
Enjoy!

Zucchini and Green Chilli Corn Bread Muffins

Marie Calendar Corn Bread Muffin Mix
Follow directions and add...
1/2 Zucchini shredded
1 small can of diced green chilies, drained
Cook as directed
Enjoy!

Mixed Seafood and Red Potato Stew

1/2 bag of frozen or fresh mixed seafood, rinsed.
4 Red Potatoes, cleaned and cut into bite size pieces
1 large can diced tomatoes
1 regular can of low sodium chicken broth
1/2 cup or less of red wine. I just did a turn of the pan
6 baby carrots chopped
4 stalks of celery chopped
4 Asparagus chopped
1/3 white onion
About a palm full of Italian Seasoning
Little salt, more pepper
2 pinches of Saffron

Put all ingredients except seafood into a pot that has a lid
Cook on stove top until potatoes are cooked, medium heat, covered
Add seafood and cover, let cook for about 5 minutes
Plate and can add a little avocado and green onions as toppings
Enjoy!

**Served this with zucchini, green chili muffins

Zucchini and Seasoning Biscuits

I ran out of whole wheat flour and Insta-bake, so I used Bisquick Health Smart
Follow directions for making biscuits (I used Almond Milk) and add...
1/2 Zucchini shredded
1/2 of a unsweetened dark chocolate piece
a pinch of Cheyenne pepper
1/2 palm full of dried Oregano
1/2 palm full of dried Parsley
1/2 palm full of dried minced onion
a pinch of garlic powder
a squeeze of Agave
Mix all together and bake. I baked mine into muffins
Enjoy!

Slow Cooked BBQ Chicken Pasta

3 Boneless/skinless chicken breast, season with a little S&P
1 Good size Sweet Potato, washed and cut
1/3 Red Onion diced
1-2 heads of Broccoli, washed and cut
**I also put my leftover Kale and Red Chard in this time
1 Cup BBQ Sauce
Few splashes of Franks hot sauce
1/2 cup Seasoned Rice Vinegar
2T Apricot/Pineapple jam
Place all ingredients in slow cooker. Cook on low for 6-8 hours

Boil water for favorite pasta and make pasta, I used Spinach spaghetti
Mix all together
Enjoy!

**I served this with my zucchini and seasoning biscuits

Focaccia Bread

Insta-Bake
Butter (I use Noca) 
Milk (I use Almond Milk)
Dried Oregeno
Dried Rosemary
Dried Basil
Dried Parsley
Butter flavored pam spray and regular
Baking dish

Follow directions on Insta-Bake biscuit recipe
Spray pan with regular spray
Spread mixture in pan, want it thin
Spray top with Butter spray
Crush in your hand the dried Rosemary and sprinkle on top of dough
Sprinkle on Basil and Parsley
Bake @425 for 10-12 minutes
Enjoy!
**Paired this with my Baked Butternut Squash and Tilapia in lemon white wine sauce**

Baked Butternut Squash

1 Butternut Squash
EVOO
S&P
1 Cookie Sheet

Microwave squash for 5 minutes to soften. Depends on squash size, may need more time
Cut lengthwise, scoop out seeds, peel skin with a peeler
Cut into cubes, and place on cookie sheet
Drizzle a little EVOO over the top
S&P
Mix with hand
Bake in oven @400 for 45 minutes, occasionally stirring them up. Can bake longer if like my crunchy-I did!!
Enjoy!
**Served with my Tilapia in lemon white wine sauce**

Tilapia, Kale, Red Chard, Asparagus, Sundried Tomatoes in Lemon White Wine Sauce


EVOO
1/3 of White Onion
2 garlic cloves, minced
5 Asparagus spears
4 leaves of Red Chard
4 Kale leaves
6 Sundried tomatoes, cut up into pieces
1 Lemon just the juice
1/2 cup white wine
S&P, just a couple pinches of both
1/8t Ground Nutmeg
2 Fillets of Tilapia

Use a fry pan that can be place in oven.
Pour a little EVOO in pan to saute onion, garlic and asparagus just a couple of minutes
Add Red Chard, Kale, wine, nutmeg, S&P, sundried tomatoes and juice from lemon mix around
Place fillets of Tilapia on top and then try and get fish to bottom of pan and all the veggies on top
Turn fish over after 5 minutes
After 10 minutes (5 minutes on each side) place fry pan in oven for 6 minutes @425
Take out, let serve for a few minutes and then serve
Enjoy!
**This is super yummy** Paired this with my Baked Butternut Squash, Focaccia Bread!

Salmon Strudel

Need 12 Phyllo dough sheets
Cookie sheet
Non stick spray, regular and butter flavor

For filling...
Follow recipe for my Salmon Burgers and add...
1 package frozen vegetables- which ever you like. Drained and dried
4 Kale sticks, cut and only use leaf part
Mix all together, with hands is best, don't over mix
Set aside

**Great dinner to make after making my baked Salmon, Sweet potato and veggie. I used the leftover Salmon, sweet potato and veggies as well. Just chop and mix into the mixture in the bowl.

Spray a cookie sheet with non stick spray
Lay two sheets of Phyllo dough together on counter or cutting board
Spray a little butter spray
Add filling, about 3 spoonfuls
Add just a little of my homemade tarter sauce on top
Fold long edges in, fold the end side like a present and then start rolling. Should look like a burrito when done
Cut in half, and make one slit on each half
Spray top with butter spray
Place a few green onion ends on top (optional)
Bake @350 for 35 minutes
Place in broiler for 1 minute to brown
let set for a few minutes
Enjoy!

Homemade Tarter Sauce



1/2 cup vegan mayo
1/2t yellow mustard
1/4t minced ginger
2T dill pickle relish, drained
4 splashes of Tabasco sauce
5 splashes of lemon juice
Dash of salt
Dash of garlic pepper
2 dashes of parsley flakes
Mix all together

Baked Salmon, sweet potato and veggies

1 Salmon Fillet
1 lemon
1 Sweet potato
1 Green pepper
1 Yellow pepper
1/2 onion, any kind
Handful of Grape tomatoes
Amino Acid
Garlic Pepper, Garlic Salt, S&P, Herbs of Providence
Pam Butter Spray and regular spray
2 13x9 baking dishes

Spray both baking dishes with Pam spray
Place the Salmon in one of the baking dishes
Splash the Salmon with Amino Acid
Cut up lemon and make slits in Salmon, squeeze lemon on top of Salmon then place lemons in slits
Place a few onions (not all, save some for veggies) on top of Salmon
Sprinkle Garlic Pepper, Salt and Herb of Providence on Salmon
Set aside

Cut up all veggies and sweet potato (make sure to cut sweet potato thin or microwave sweet potato for 5 minutes before added to pan of veggies)
Place veggies, sweet potato and the rest of the onion in second baking dish
Spray with Butter Spray
Sprinkle with pepper and garlic salt
Mix all together

Place both pans in oven @ 375 for approximately 25 minutes, just check Salmon
Then leave Salmon in oven and turn broiler on, put veggie pan in broiler for about 10 minutes
Take Salmon out 5 minutes into cooking veggies in broiler
Take Veggies out and plate all

Baked Vegetarian Chorizo, Turkey and Veggie roll up


1 package of 11 whole wheat flour tortillas
1# 97/3 Turkey Meat
1 package Vegetarian Chorizo
1 can fancy sliced green beans
1 can 28oz diced tomatoes
1/2 bag frozen spinach, rinsed & drained
1/4t taco seasoning
Cookie sheet
preheat oven @350

In a stainer, empty green beans, tomatoes, and spinach (after you have rinsed and drained byself already) let all drain, keep mixing together
Brown turkey in a pan, add taco seasoning
Cut casing off Chorizo, and squeeze into pan with turkey
Cook for a couple of minutes and then add the tomatoes, green beans and spinach to the pan. Cook for a couple minutes. Remove from heat.

Hold tortilla in hand and add mixture, roll and place on a cookie sheet. Continue until filling and tortillas are gone. Bake @ 350 for 15 minutes. Let stand for two minutes and then cut and serve.

These are spicy from Chorizo, would be yummy with guacamole or sour cream

Crock Pot Green Chilie Pinto Beans

1# Pinto Beans or +/-
Soak them in water over night
In the morning, rings and pick through. Place in crock pot and also add the following ...
1 can low sodium chicken broth
1 cup water
1 4oz can diced green chilies
1/4 t taco seasoning
1/4t garlic pepper
1/4t cayenne pepper
1-2T dried minced onion
Stir and let cook on low for the day

Slow cooked OJ pork


In crockpot...
4 pork chops, no bone
1 can frozen, but thawed OJ
1/2 cup white wine
1/2-1 cup water
Cook all day, about an hour before dinner add...
1 can pineapple chunks, most juice drained
1 can water chestnuts, most juice drained
1 package frozen vegetables, your choice

Make some brown rice (once I put rice in boiling water, I add 2-3 squeezes of Amino Acids) and serve OJ pork ontop
I added a little drizzle of sweet chili sauce

Salmon Burger Sauce

I usually always have hummus, so I used some in my sauce. If you don't you don't really need it.

Mix all ingredients in a bowl

1t Hummus
2t Vegan Mayo
less than 1/2t Sweet spicy mustard
Few dashes of dried parsley flakes
1t Chipotle sauce more/less
1/2 t Dill relish
S&P, little salt, lots of pepper
Enjoy!

Corn and Black Bean Salad

In a strainer combine the following 3 ingredients
1 can black beans, drained and rinsed
1 can green beans, drained
2 cups frozen Corn
let sit until ready

In a bowl combined and mix
1/4 cup Red onion
Any color bell pepper you wish, red, green, orange, yellow. I used a green and yellow
1 seasoned packet of Chili Lime
1 lime juice
2T EVOO
little salt.
Add the strainer ingredients, mix all together and let sit for about 15 minutes.
Enjoy!

Salmon Burgers


For this recipe I used Trader Joe's frozen Salmon patties.

Here is my recipe for my Salmon patties. Again, I eyeball most of my creations. So I will do my best at giving measurements.
t=teaspoon, T=tablespoon, 3T egg whites=1egg
Mix all in a bowl
2 Green onion, minced with a hand held grater
2 garlic, minced with a grater hand held grater
Handful or more of Panko bread crumbs or Brown Rice Bread Crumbs
1/2t of Amino Acids
1/2t Soy Sauce
1/2-1t chilli sauce, depends on your heat level
1/2t pure Sesame oil
2 Eggs, or I also use 6T of egg whites
2 Cans or more of the canned Salmon, drained and layed out on paper towel to get moisture out.
S&P
Mix, make into patties and bake @350 for 20 minutes.

Building the burger,
Toasted Naturals whole wheat, flax and fiber rolls- they are thin!
Spinach, tomato, pepperoncinis, red onion.

Lowfat Chicken, Sweet Turkey Italian Sausage Lasagna

I got original recipe from Cooks.com here it is...

8 oz. lasagna noodles, uncooked
2 c. chopped cooked chicken
1 (10 oz.) pkg. frozen spinach and/or broccoli, thawed and drained well
8 oz. grated Mozzarella cheese
1 sm. carton low fat cottage cheese
1 (32 oz.) jar spaghetti sauce

Preheat oven to 350°F. Spray 9x13 baking dish with Pam. Pour 1/2 cup spaghetti sauce in dish. Place layer of noodles in dish. Place spinach, both kinds of cheese and chicken in dish. Pour about 1 1/2 cups sauce over this. Bake about 45 minutes.

My Version...
t=teaspoon

2-8oz Whole Wheat, whole grain Lasagna noodles, broken and cooked al dente, drained. Will have some noodles leftover.
3 skinless, boneless chicken breast, cooked in boiling water with a little dried onion for flavor. Once cooked, shred.
3 Sweet Turkey Italian Sausage links cooked, scoop out of the excess oil and place in a big bowl to mix with all other ingredients.
1 package frozen broccoli and cauliflower. 1/2 package of frozen spinach. Rinse both together in strainer, until defrosted, and then towel dry to get moisture out.
2oz of goat cheese
3t of Tofutti cream cheese
1 package Veggie Mozzarella
2 jars Classico sauce. I used one tomato/basil and one Mushroom and olive.

Mix following ingredients in a bowl (shredded chicken, sausage, broccoli/cauliflower, spinach, goat cheese, Tofutti.

Spray a 13x9 baking dish with non stick spray.
Pour a little sauce on bottom and spread. Add a layer of noodles. A little more sauce, not much at all. Add the chicken mixture, add a layer of Mozzarella cheese, add sauce. More noodles, chicken mixture, sauce and spread evenly and then top with cheese.

Bake @350 for 45 minutes. Let rest for a few minutes and then serve! I made this recipe bigger because I needed to serve 6 adults.

Phyllo Dough Pockets

t=teaspoon, T=tablespoon

-Frozen Phyllo Dough, follow thawing directions.
-Any cut up veggies. I believe I used, Cauliflower, red peppers, green peppers, broccoli, onion, the list goes on!
-2 Tomato/basil frozen patties-Morningstar, just leave out for about 30 minutes to thaw and easily tear apart.
-Mix veggies, and torn up tomato/basil patties in a bowl.

-In another bowl, combine...
1t Hoisin Sauce
4t BBQ sauce, I make sure mine BBQ is not made with High Fructose corn syrup, watch out most are.
1t Sweet and Sour Chili sauce, can be found in Chinese section of store.
1t Black pepper sauce, can be found at Trader Joe's.
-Add sauce to veggies and patties, mix well

-Spray cookie sheet with Butter Flavored Pam Spray
-Layout sheets and lightly spray with Butter Flavored Pam spray. In between sheets and all. I believe for each pocket I used about 7 sheets, just depend on how thick it looked.
-Add some mixture and then take the corners of the Phyllo sheets to the middle to make a pocket. Spray again with Butter spray and repeat process.

Bake @350 for 40 minutes, brush on a light brushing of regular Hoisin Sauce.
Bake @400 for 10-15 minutes. I go by color. We like ours crispy.
Let stand for a few minutes.

Mexican style baked Cod


Preheat oven to 400 degrees F. Lightly grease one 8x12 inch baking dish. I used a Pamper Chef stone bake dish.

cod or any white fish

1 jar salsa

2 handfuls of fresh spinach

2 handfuls of frozen fresh green beans

2 handfuls of Veggie Cheddar

1/2 cup coarsely crushed corn chips

Avocado, a few slices on top once done.

Pat dry fish with paper towels. Pour just a little salsa on bottom of bake dish. Lay fillets side by side in the prepared baking dish. Pour a little more salsa over the top. Layer, spinach, green beans and pour the rest of salsa on top. Sprinkle evenly with the Veggie Cheddar. Top with the crushed corn chips.

Bake, uncovered, in the preheated oven for 25 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado.

Green Chili Vegetarian Refried Beans

One small can of green chili's
One 15oz can of Vegetarian Refried Beans
Handful of Veggie Cheddar

Heat on stovetop until ready to serve!

Chicken, spinach, tofutti cream cheese Red Enchiladas

Makes 10 corn rolled tortilla enchiladas
t=teaspoon

In crock pot, cook 2 boneless/skinless chicken breast in one 15oz can of Red Enchilada sauce. I cooked it for about 5.5 hours on low.

Fork out chicken (leave sauce in crock pot) and shred. Place in a bowl and add as much spinach as you would like.
Add 3t tofutti cream cheese (or greek yogurt) and mix well.

Warm up 10 corn tortillas in a paper towel in the microwave for 30 seconds.
Take them out and place in crock pot and cover them well with the sauce.

Take out one at a time, add chicken mixture and roll. Place in baking dish.
After all are rolled, pour the rest of the sauce over the enchiladas in the baking dish.

Sprinkle on some Veggie Cheddar and place a little dab of green chilies on the middle of each enchilada.

Bake @ 350 for 20 minutes.
I added a few slices of avocado on top once platted.

Cabbage Salad Dressing

2 spoonfuls of Vegan Mayo
1 splenda packet
1 squeeze of Agave
Couple dashes of Seasoned Rice Vinegar
Couple dashes of Amino Acid (can be found at health food stores, just like soy sauce but good for you).
S&P
Stir and mix with slaw!

Orange Sauce

Great over meat or pork

Heat all in a sauce pan. Can pour over and bake on top of meat/pork or pour on after baking is finished.

1 can orange concentrate
1/2C Pineapple/Apricot preserves (S/F)
1t fresh ginger (buy a ginger root, peel it and freeze it. Never goes bad, and when need it, just use a hand grader to shave it).
4 Scallions
2T Teriyaki Sauce
1/2T Housin Sauce
2 splashes of Worcestershire sauce

Pineapple/Apricot Sauce

Great over Tilapia

In sauce pan heat all together...
Pineapple/Apricot preserves (I use S/F)
Few dashes of Soy Sauce
Rice Vinegar
1 Chicken bourlin cube
Water
I have no clue what measurements I used, I just eyeball. Start off small and add more if needed.

Avocado Dip/Sauce

Great with Salmon cakes, on any style burger or as a dip.

Mix in food processor

2 Avocado
S&P
1/2C cilantro
1 lime
1 C sour cream (I use non diary kind) or little less.
Dashes of hot sauce-to taste (I believe I used Tabasco)

Peanut Butter/Chili sauce

Yummy with Chinese Noodles, Chinese dishes and etc

1/4 C PB-chunky
1/4 C Rice Vinegar-seasoned
Mix well
1 T Soy Sacue
2-3t of Chili sauce
Mix well

C=cup
T=tablespoon
t=teaspoon

Spinach Sauce

Good over whole wheat pasta, brown rice pasta, chicken or a spread on bread...

In food processor
frozen spinach-thawed and drained
Tomatoes
2 or more garlic cloves
white wine, a turn or two in food processor
1 whole red pepper
1 whole yellow pepper
1/4 of an onion
fresh basil
some marinated olives

Portobella Mushroom Sauce

Delish overwhole wheat pasta!

Rosemary
S&P
Agave
Balsamic Vinegar
Worcestershire sauce
Portobella mushrooms

Mix all in bowl, taste and then saute all in saucepan with portobella mushrooms. Mix with whole wheat penne and yummy!

Homemade Marinara

3 garlic cloves
1/2 White onion
1 green bell pepper
some fresh basil
some fresh oregano
Red pepper flakes (to your heat liking)
Parsley flakes
1 pkg cherry tomatoes
1 can Italian seasoning tomatoes
Pepper
dash of salt
EVOO, one turn of the pan

Saute garlic, onion, bell pepper in EVOO.
Add other ingredients, cover until tomatoes burst. Once they burst, smash with potato smasher if needed.

Collard Green Pesto Sauce

Place all in food processor...
Collard greens
toasted pecans or walnuts-optional
garlic
S&P
Lemon & lime juice
EVOO
