Shrimp Jambalaya

I followed the recipe from Allrecipes.com

Here is what I changed and added...
1/2 Cup of White Wine
Pinch of Saffron
Pinch of Red Pepper Flakes
1 Turkey Kielbasa, cut into small pieces
Red pepper instead of green
Asparagus
2 cups of Couscous- at the end before adding the shrimp

**I changed the recipe today again, 3/22/11**

1 chicken breast, cut and slightly browned in a pan before putting it in crock pot
2 sprigs of Kale added when Shrimp is added
Did not have celery, used carrots. Did not have any Asparagus so I put in a can of drained green beans.

Toasted Almond/Mustard Red Snapper (or any fish)


4 fillets of Red Snapper
Amino Acid (optional, I poured a little on Red Snapper the day before in a bag to marinate)
2 handfuls of plain Almonds
1T EVOO
S&P just a little to give Almonds taste when toasting
Brown Rice Bread Crumbs (or any that you like)
1/2C Dijon Mustard and Honey Mustard (I ran low on Dijon so I mixed the two. You don't have to though)
Place mustard mixture in a bowl and bread crumbs/almonds-once toasted and smashed in another bowl.
Cookie sheet and baking rack-place on top of cookie sheet.
Spray the cookie sheet and rack with non stick spray.

Mix almonds, EVOO and S&P and arrange them on a baking sheet. Toast @375 for about 20-25 minutes. Just keep an eye on them.
Once almonds are done, either put in food processor or put in plastic ziplock bag and smash. Once they are crumbs, may have a few chunks, mix with bread crumbs.
Make sure Red Snapper is dried, and then place in mustard mixture and coat well. Next, place in bread crumb/almond mixture. Once coated, lift and let any fall off. Place on cookie rack that should be on cookie sheet.
Repeat until all fillets are done.
Bake @400 for 30 minutes.
**I used some of the leftover bread crumbs/almond mixture with some roasted veggies- green beans and carrots!
***In the picture, you see the green beans and carrots I roasted with Spray Butter, garlic salt and pepper. I also sauteed up some spinach. 1/2T of EVOO, 1 garlic, smashed, 1/4C of onion, 1 lemon wedge-juice. Saute the  garlic and onion in the EVOO. Add spinach a splash of water and lemon. Let cook down. I also made Butternut Squash fries. Just follow my recipe for my Baked Butternut Squash. I actually like the little cubes of Butternut Squash better than the fries. I like when they get real crispy! See my Strawberry-Blackberry Sauce for the sauce on top of the Red Snapper.

Mixed Seafood and Red Potato Stew

1/2 bag of frozen or fresh mixed seafood, rinsed.
4 Red Potatoes, cleaned and cut into bite size pieces
1 large can diced tomatoes
1 regular can of low sodium chicken broth
1/2 cup or less of red wine. I just did a turn of the pan
6 baby carrots chopped
4 stalks of celery chopped
4 Asparagus chopped
1/3 white onion
About a palm full of Italian Seasoning
Little salt, more pepper
2 pinches of Saffron

Put all ingredients except seafood into a pot that has a lid
Cook on stove top until potatoes are cooked, medium heat, covered
Add seafood and cover, let cook for about 5 minutes
Plate and can add a little avocado and green onions as toppings
Enjoy!

**Served this with zucchini, green chili muffins

Tilapia, Kale, Red Chard, Asparagus, Sundried Tomatoes in Lemon White Wine Sauce


EVOO
1/3 of White Onion
2 garlic cloves, minced
5 Asparagus spears
4 leaves of Red Chard
4 Kale leaves
6 Sundried tomatoes, cut up into pieces
1 Lemon just the juice
1/2 cup white wine
S&P, just a couple pinches of both
1/8t Ground Nutmeg
2 Fillets of Tilapia

Use a fry pan that can be place in oven.
Pour a little EVOO in pan to saute onion, garlic and asparagus just a couple of minutes
Add Red Chard, Kale, wine, nutmeg, S&P, sundried tomatoes and juice from lemon mix around
Place fillets of Tilapia on top and then try and get fish to bottom of pan and all the veggies on top
Turn fish over after 5 minutes
After 10 minutes (5 minutes on each side) place fry pan in oven for 6 minutes @425
Take out, let serve for a few minutes and then serve
Enjoy!
**This is super yummy** Paired this with my Baked Butternut Squash, Focaccia Bread!

Salmon Strudel

Need 12 Phyllo dough sheets
Cookie sheet
Non stick spray, regular and butter flavor

For filling...
Follow recipe for my Salmon Burgers and add...
1 package frozen vegetables- which ever you like. Drained and dried
4 Kale sticks, cut and only use leaf part
Mix all together, with hands is best, don't over mix
Set aside

**Great dinner to make after making my baked Salmon, Sweet potato and veggie. I used the leftover Salmon, sweet potato and veggies as well. Just chop and mix into the mixture in the bowl.

Spray a cookie sheet with non stick spray
Lay two sheets of Phyllo dough together on counter or cutting board
Spray a little butter spray
Add filling, about 3 spoonfuls
Add just a little of my homemade tarter sauce on top
Fold long edges in, fold the end side like a present and then start rolling. Should look like a burrito when done
Cut in half, and make one slit on each half
Spray top with butter spray
Place a few green onion ends on top (optional)
Bake @350 for 35 minutes
Place in broiler for 1 minute to brown
let set for a few minutes

Baked Salmon, sweet potato and veggies

1 Salmon Fillet
1 lemon
1 Sweet potato
1 Green pepper
1 Yellow pepper
1/2 onion, any kind
Handful of Grape tomatoes
Amino Acid
Garlic Pepper, Garlic Salt, S&P, Herbs of Providence
Pam Butter Spray and regular spray
2 13x9 baking dishes

Spray both baking dishes with Pam spray
Place the Salmon in one of the baking dishes
Splash the Salmon with Amino Acid
Cut up lemon and make slits in Salmon, squeeze lemon on top of Salmon then place lemons in slits
Place a few onions (not all, save some for veggies) on top of Salmon
Sprinkle Garlic Pepper, Salt and Herb of Providence on Salmon
Set aside

Cut up all veggies and sweet potato (make sure to cut sweet potato thin or microwave sweet potato for 5 minutes before added to pan of veggies)
Place veggies, sweet potato and the rest of the onion in second baking dish
Spray with Butter Spray
Sprinkle with pepper and garlic salt
Mix all together

Place both pans in oven @ 375 for approximately 25 minutes, just check Salmon
Then leave Salmon in oven and turn broiler on, put veggie pan in broiler for about 10 minutes
Take Salmon out 5 minutes into cooking veggies in broiler
Take Veggies out and plate all

Salmon Burgers


For this recipe I used Trader Joe's frozen Salmon patties.

Here is my recipe for my Salmon patties. Again, I eyeball most of my creations. So I will do my best at giving measurements.
t=teaspoon, T=tablespoon, 3T egg whites=1egg
Mix all in a bowl
2 Green onion, minced with a hand held grater
2 garlic, minced with a grater hand held grater
Handful or more of Panko bread crumbs or Brown Rice Bread Crumbs
1/2t of Amino Acids
1/2t Soy Sauce
1/2-1t chilli sauce, depends on your heat level
1/2t pure Sesame oil
2 Eggs, or I also use 6T of egg whites
2 Cans or more of the canned Salmon, drained and layed out on paper towel to get moisture out.
S&P
Mix, make into patties and bake @350 for 20 minutes.

Building the burger,
Toasted Naturals whole wheat, flax and fiber rolls- they are thin!
Spinach, tomato, pepperoncinis, red onion.
